Air fryer onion rings for vegans

If you want something to go with your vegan cauliflower wings, why not try these vegan onion rings – air fryer style!

You will need

2 large onions (or 3 medium)

Wet mix:

75g (1/2 cup) flour

190 ml (2/3 cup) non-dairy milk of your choice (oat, soy, almond etc)

1/2 tsp paprika

1/4 tsp turmeric

1/2 tsp salt

Dry mix:

100g (1 cup) Panko breadcrumbs

1/2 tsp paprika

1/4 tsp turmeric

1/4 tsp salt

Here’s how

  1. Peel your onions and cut the ends off. Cut into half-inch circles and then remove the inner sections so you have rings. You can keep the left-over onion in the fridge for other recipes.

  2. Add all the wet mix ingredients to a bowl and give it a good stir.

  3. Mix the dry mix and then separate into two bowls. This is because the dry mix tends to get a bit sticky in the process.

  4. Dip each onion ring first into the wet mix and then into the dry mix, so your onion gets a good coating. Repeat until all your onion rings are prepped.

  5. Pre heat the air fryer to 200°c with the usual coating of cooking spray.

  6. Give them 8-10 minutes in the air fryer, depending on how crispy you like them. It’s a good idea to do these in batches or they will clump together and not crisp up.

  7. Serve warm with the sauce of your choice.

Vegan onion bhajis

Want to know how to make a vegan onion bhaji? Here’s the great news – they already are. In fact, lots of Indian cooking is vegan – so if you love spice there’s a whole subcontinent of options.

You will need

2 onions

100g (2/3 cup) flour

1 tsp garlic paste

1 tsp ginger paste.

½ tsp baking powder

½ tsp chilli powder

½ tsp turmeric

½ tsp salt

1 chopped green chilli

Here’s how

  1. Finely slice the onions and then mix in some salt. Leave for an hour.

  2. After an hour, the onions will be moist. Squeeze out any water.

  3. Now add all the ingredients into a bowl and mix well.

  4. Preheat the air fryer to 175°c, making sure there’s a good layer of cooking spray on the basket.

  5. Meanwhile shape your mix into bhaji patties.

  6. Add your bhajis to the air fryer. The trick is not to have too many in at once. Make sure they all have space around them and that none are touching. You might have to do them in batches.

  7. After 15 minutes, your bhajis will be ready. If you want an easy sauce with them, mix together vegan yoghurt, sliced cucumber and some mint sauce (or mint) for a simple raita.

Tip: We’ve used garlic and ginger paste for convenience but use fresh if you don’t mind some chopping!

That’s dinner sorted, but we’ve got some great ideas for vegan cakes and bakes too.
